The lavender roads around Sault
A drive through the high lavender country below Mont Ventoux, where true lavender flowers later than on the plains.

What it is
Sault is a hill town in the Vaucluse, at about 760 metres, looking over a wide basin of lavender, spelt and pasture with Mont Ventoux behind. Because of the height, flowering runs later here, from early July to mid August. Growers at this altitude raise fine lavender, the true species, whose oil is more delicate than that of lowland lavandin and carries a protected name. Signed routes link Sault with the villages of Aurel, Ferrassières and Montbrun-les-Bains, past small distilleries where the cut stems are steamed for oil. Sault holds its lavender festival each year on 15 August.
Before you go
- Come here if you have missed the lower fields. Late July is usually still in flower.
- Visit a distillery during harvest to see and smell the stills working.
- There is a marked walking path through the fields just below the town.
