Rose water
Water scented with roses, made by distilling petals; used in food, perfume and ritual.
Also: gulab jal, golab
Rose water is the fragrant water that comes from distilling rose petals, most often those of the damask rose. It flavours sweets and drinks from Morocco to Bengal: Turkish delight, baklava, gulab jamun, kheer, sherbets. It is sprinkled on guests at weddings in South Asia and the Middle East and used in religious ceremonies. Well-known producing regions include Kashan in Iran, the Rose Valley of Bulgaria, Isparta in Turkey and Kannauj in India.
